I will be working Mon, Tues, Wed, Thurs, Fri.
I will be well within 60 hours.
Can I work Saturday, as well, and take a full weekly rest on Sunday and Monday?

Yes that’s legal.

Did you get a full rest last week? If not you’ll need 45. If you did, you’ll be ok. You’ll need to pay your 3 hours back though.
