Coming off a boat in Dover Friday afternoon and tipping in Eastbourne on Monday morning.
Does anybody know if parking in or around Eastbourne?

Probably better of in Newhaven by ferry terminal. Facilities and five min walk into town for pubs and eateries mate.
Theres a service station on the A22 at Polegate. Theres a Brewers Fayre, McDonalds and a co-op in the petrol station. Parking is free but I think they ask donations.

The above services are probably your best bet. Only half a dozen parking spaces but I’ve never seen it full All facilities listed plus your only about 10 minutes walk from polegate. Few shops and pubs for your weekend entertainment and also a train station if your feeling adventurous.
Only fly in the ointment is I don’t think the services has showers although there is a motel as part of the pub complex. I’m sure they would let you use a room for a small fee.
