I have only just started driving professionaly and would like some clarification on the WTD do you have to take the 30 minute break in one go after 6 hours of work or can it be split into two 15 min breaks throughout the 6 hour period and if I exceed my driver hours for whatever reason is a digital print out with the reason written on the back and signed by me enough evidence for a VOSA inspector should I get stopped.

You should not work more than 6 hours before having a break of at least 15 minutes.
If your working time is between 6 hours and 9 hours you should have a total of 30 minutes break which can be split into two parts of no less than 15 minutes each.
If you go over you driving time and there is a good reason then you should do a manual entry on the back of a printout or chart explaining the reason, this should satisfy VOSA but remember that you are only allowed to go over your driving time for as long as it takes to get to a safe/suitable place to park.
