It’s a newish boat, comfy rooms, single occupancy.
Food hit and miss, depends on chef.

There are roadworks on the Maas bridge. It can get very congested on that leg of the zig-zag around Nijmegan at the time you’ll be getting there. I’d cross the border at Elten and drop down to Kleve, rather than Goch and come up to it.
You can get maut at either border crossing.
If you go into Nijmegan, cross the river there and onto the B9 to Kleve, there’s a little Aral Autohof at Eudem, just of here > Google Maps. That probably has a maut machine.

If you go through Nijmegen, cross the bridge on the N325 then keep right before looping round to the left and then keep right again. It is signed for Kleve but you have to wits about you as you can easily miss the last right fork and end up back on the bridge.
Avoid the Maas bridge (A50) to the west of Nijmegen as it is a right pain.
If you go via Arnhem (A12), cross at Elten as Simon suggests and pick up your Maut at the border for the 2 junctions down to Emmerich.
Maybe pick up your Maut for the onward leg to Mülheim here too, to save ■■■■■■■ around trying to find a machine in Kleve.

Aye, you can get two tickets at the same time and pick a start time for the second one.
Well you can pick a start time for both of them if you really want to.
I think the best way to do the Mulheim leg ticket, will be to put in the junction you’ll be joining the autobahn at as your start point, Goch border as your finishing point and put in the junction you need at Mulheim as a via point. That’ll save any mucking about trying to find a machine in Mulheim, provided the machine gives you enough time to get down there, tip and get back. You can check your cut-off time on the final screen before pressing the go button.

If you go B9 from Nijmegen you will have trouble finding a Maut machine, so would suggest that crossing at Elten and picking up all your tickets there would be the most practical route for you in this case.
