I did the required manual entry from when my card was first issued, ok. I then recorded 15 mins other work and 59 mins driving, and then withdrew my card. Unfortunately I failed the assessment and the agency let me go due to my lack of experience.
It’s been a few weeks now and I’m with another agency and I think I may be put into an analogue vehicle.

How and where would I record the two weeks gap from taking my digi card out on the assessment to inserting my first ever tacho disc into the analogue vehicle?

You don’t need to record the two weeks gap at-all.
If you use an analogue tachograph just complete the chart for the days work that you do.
When you use a digital tachograph you do a manual entry to finish the last shift that you did on a digital tachograph, for instance if you did 10 minutes other work after withdrawing the card you would put that in the next time you use the driver card.
You also do a manual entry for any work you do before inserting the card, so if the shift starts at 08:00 and you put the card in at 08:10 you would manually record the 10 minutes missing time.
You do not do manual entries for days that you do not drive, and you do not do manual entries on a digital tachograph for days that you use an analogue tachograph.

Not every issue can be covered on a course but there is nothing to stop those on such a course asking the trainer questions
If the trainer cannot give the answer then start being concerned if they really know their stuff !!
