I know how to put in the dates etc for Manual Entries but can anyone please list which order you put the shift times, breaker, POA etc - do you start with the shift you finished the day before etc?

You build up the info that the tacho doesn’t know about, so starts from the last time your card was in the tacho.
So you only set the finish time and type of the next event, the start time of each entry is a given.
In it’s simplest form you may just add a manual entry for rest from last card ejection to current time / date.
If not you might change the mode, then change the end date / time of the new entry, which will allow another entry to be added from the end of this entry.
