It is shame how the sheep flock to the Algarve and costa`s,missing out on stunning mountain scenery,rivers,cuisine,this area is where they do a lot of filming for adverts and films.
Local dishes try are Ttoro or Tioro,a fish stew,like the French Bouillabaisse.
Fabada,a pork and bean stew.
Trucha a la Navara,trout with ham,this was Kontixxa at Sunbilla used to serve before they shut the restaurant.
Cordero al Chilindron,a lamb stew.
Cocido Monatnes,haricot beans,pork and spicy Chorizo sausage.
Quesada Paseiga,a cream cheese ,lemon and cinnamon tart.
Bocates Cazuela,an Anchovy fish starter.
Navara is a stunning area that is bypassed by some tourists,the wine from la Ribera,a blood like deepness and dark colours,like the red sandy soil of the Navarra area,which resembles a Mars planet.

Just to add to the confusion why have you used the basque region twice in your post title?
As you will or ought to know the Basque autonomous region of Spain is known in the Spanish language as Pais Vasco, and in the basque language as Euskadi.
And as you are on about the north western region what did Cantabria do to get missed out? Or for that matter Navarre?

And they are gorgeous ! Always had one if I saw it on a menu. They do something similar in Madrid area but I can’t remember the name.
How do they cook them vasco ■■ Because they can’t simply be fried/grilled to come out the way they do.
they are usually done on a wood fire or charcoal and in a good restaurant they will be brought to you on a hot stone plate so that you can finish them off exactly how you want them

Portugal for me = fish.
Never tasted cod like they do it anywhere else in the world. ( I think it was cod ) and I’m not a fish lover.
The cod is called Bacalau,over a 1000 recipes for it,very very nice,they do spicy beef Bifana`s,like a sarnie,green cabbage soup,sometimes with meat in it.
A foot high sandwhich with hot and spicy gravy poured over it,that is called a Franchesina.
With everything inside of it.
Tripe dishes are tasty,cows stomach,but they do it well,and is aslo fanastic.
Cod fish cakes,like you get in UK chippies,but much better,some with cheese inside.
