I don’t know about cross channel day trips.
I know DFDS do a one or two day mini-cruise from North Shields to IJmuiden. You get a few hours in Amsterdam on the one day, or about a day and a half with a night in Amsterdam on the two day. Bus transfers are included.
P&O from Hull do much the same thing with their sailings to Rotterdam (Rotterdam or Amsterdam) and Zeebrugge (Brugge).

DFDS do one from Harwich to Hamburg fairly regularly as a coach trip. Last time I went with my ex wife 'twas about 70 quid per person. Grub supplied on boat and about 6 hours in Hamburg shopping and that
