I am a tramper and just been diagnosed with Coeliac. So haven’t a clue what to do for food and stay tramping. I am told that ‘1 in 100’ have it… so hoping to hear from fellow sufferers.
At present all i can think of is cooking all food for the week at home and using an additional fridge. I got some 2nd hand cookbooks on ebay yesterday which hopefully will give me some ideas. Vegetarian diet is another possibility.
Convenience foods are ruled out - almost all will have a sauce with wheat flour. It’s not as easy as it seems. Hence my post - perhaps better to reply via PM.
I have close acquaintances with gluten intolerance, but not myself.
Eating out needs care but is doable. Places are much better now that ten or twenty years ago.
Supermarkets are also much better geared up, so cooking frrom scratch is not necessary.
You are absolutely correct that many things do conatin gluten, such as sauces, sausages, etc and being gluten free is not easy, but it is not impossible.

What truck do you drive ? does it have at least a microwave or inverter
I’ve got both and it helps a lot , as I’ve now got an air fryer also little gas stove
I never go Hungary or eat rubbish
I very rarely buy take away food , but do have the ham, eggs and chips when at Chippenham truck stop as they do some GF stuff .
Some shop micro meals are GF just look at the labels for BROW , and may contains .
I batch cook sweet n sours and rice , also mince mix to go with pasta (don’t freeze gf pasta )
If you park near a big super market of a night ,go browsing for a treat
I’ve got one of these compressor fridges with separate freezer and works on 12/24v also 240v leave it running all week ok as it voltage senses

PS check your local Aldi as they’ve started doing GF stuff
The Tesco Extra I go to also have a “free from” range, I know they do quite a lot of free from dairy stuff but I don’t know how much free from gluten they have, if there’s a Tesco Extra near you it’s worth a look though.
I would imagine all the big supermarkets would have similar ranges these days.
