The other day I changed the local time on my digi unit to reflect the clocks changing but it has reverted back. If I was to change the time after my shift would that affect my shown daily rest period for that day and would it affect my timings and show infringements for work time etc? Many thanks

No because all activity is recorded in UTC not local time
You can change the local time on the tachograph display anytime you like, as Reef said all activity recording is done in UTC time and you can only change that by one minute a week.
