If you can get a 45 hour weekly rest period in every week there’s nothing to stop you doing six days every week.
In the scenario you’ve posted you could legally work Monday to Saturday in week 2.

Work Mon - Sat, have Sun and Mon off (i.e 45 hrs +), then work Tue to Sat and have Sun off (i.e reduced rest) and then Mon to Fri followed by 45 hrs + paying back the shortfall the previous week’s reduction.

The compensation for the reduced weekly rest period should be paid back by the end of the third week following the week in which you had a reduced weekly rest period.
